My current obsession is this: The Blueberry Chocolate Smoothie! I’ve adapted it over the months, but what I’ve ended up with is a perfect combination of sweet and chocolaty and peanut buttery. It keeps me full all morning long, and I get about 3 cups of green leafy veggies in me before I even know what’s happened!
- ½ cup blueberries
- 1 cup coconut milk (or almond milk)
- 1 cup cold water
- 3 big handfuls organic spinach
- 1 heaping TBS raw cacao
- 2 TBS natural peanut butter (or other nut/seed butter, like almond butter or tahini)
- Put all the ingredients in a blender and blend until smooth and creamy! Enjoy
